I've found that most of the fics I follow tend to update on Monday or Tuesday.
Interesting...I personally aim for updating on Friday afternoons or sometime on Saturday, but I wanted to see what other people did.

Tough call. I'm on Fimfiction, which has a "Latest Updates" box showing the 15 most recently updated stories.
Fimfiction is at its busiest when it's evening in the States, which corresponds to about 1-2 AM where I live.
Updating at a slow hour means your story will stay in the Latest Updates box (and thus on the front page) longer, but fewer people will be around to see it. Updating at a busy hour means you'll quickly get shoved out of Latest Updates because lots of other people are updating as well, but a lot more people visit the site at that time.
I haven't really figured out which is the better option yet. Mostly, I just update whenever I've got a new chapter ready.
Mache dich, mein Herze, rein...I don't know. I always tend to upload one-shots sporadically. I also often post chapters of multi-chapter stories once a day or two or three times a week, so specific days don't particularly stand out to me.
On fanfiction.net, the "best" time to get views seems to be updating on a Friday morning. However, I stress update - my regular readers hit it that day, usually, but posting up a new story just doesn't get the views on a Friday.
