So you think they'll start out with him being imprisoned by humans like in the comics or will they try and tell a different story?
The second book, "The Doll's House", was my introduction to The Sandman; I enjoyed it a great deal, and it made an excellent starting point due to having an Everywoman as the viewpoint character. Starting with it would leave some mysterious backstory (what happened to the Lord of Dreams that enabled some of his servitors to escape?) while establishing Morpheus, Rose, and other crucial characters (e.g., Lyta) effectively. It also has the advantage of not including any characters from other DC comic books that a casual fan would recognize, whereas "Preludes and Nocturnes" complicates things by including Constantine, who's appeared in other past and current adaptations.
You couldn't make the whole series into a single film, but if the first one worked out reasonably well, you might be able to do a set of films. Most of the books are composed of short stories that, while excellent, mainly aren't necessary to the central plot. "Brief Lives" and "The Kindly Ones", as well as the introduction of the rest of the Endless, and the backstory with Orpheus, are the key points. They could be covered in two movies, to make a trilogy.

Skipping over the first one could work I guess. The first few issues are a bit weird although I'd be a bit sad to see Morpheus's descent into Hell removed. That was interesting.
If they did do Doll's House first then I think they could make a trilogy that goes Doll's House->Brief Lives->The Kindly Ones/The Wake with a few minor changes to smooth things out.
edit: I think A Game of You is extraneous and rather boring so that can go. They could probably introduce Thessaly in movie 1 as one of the tenants at the place Rose stays. Season of Mists is cool but largely unnecessary to the overall plot.

If I were doing a Sandman movie, I'd make it more anthology based, probably include segments with Dream, Cain and Abel, Lucifer, Death, and probably end with a story about Daniel.
Of course, don't you know anything about ALCHEMY?!- Twin clones of Ivan the GreatIf Gaiman isn't heavily involved in any Sandman film then I believe it runs the heavy risk of being a complete train wreck. This isn't like Stardust, this is one of the most iconic comic characters ever.
I wouldn't say he's that iconic.
To comic book fans he's a really big thing but other than that...
Stand Fast, Stand Strong, Stand TogetherSandaman is extremely famous among fans of the genre and Gaiman himself, but is nowhere near the "rest of the world" notoriety that something like Watchmen or The Dark Knight Returns achieved. If only because it is extremely atypical of the comic book medium.
The Sandman has been a globally well known cultural figure long before Gaiman wrote his series. Even if the average Joe has no idea he had his own comics, almost everyone knows the concept of a man who makes you sleep every night with his magical sand.
Y'all can relax, cuz Gaiman IS involved in the film.
