If I'm not mistaken, it actually varies from "they" to "she." That happens with Knight Knight and a few other random encounter monsters... Snowdrake is another one that stands out. (I'm not sure why that happens, unless it's really just the narrator being uncertain/encompassing with the pronouns they use for those monsters.)

I checked. While the only reason we know Snowdrake's gender is his father, almost all of Knight Knight's pronouns are her, there is one it in her flavor text but no they.

I mean it's not surprising at all considering a lot of Undertale fans are also fans of SU.
I do find the whole thing about the SU fandom being made the Undertale version of Stronger Than You is more popular than the original to be pretty funny though.

That's actually due to the fact that the original upload video of Stronger than You got taken down due to copyright, leaving the UK (read identical to the original) version as the only easily accessible version. Thus it's a younger video than the Undertale Stronger than You parody.
