I find it more amusing that when Bruce suggests it she blows the idea off entirely but the moment the Horse trainer suggests it she's completely on board with it.

No... she's a kid. More of a kid than Bruce, really, who seems to have been forced to grow up really quickly due to the death of his parents.
And, to some degree, this is Bruce being hoist by his own petard. He dangled his riches (of ponies) in front of Karen to entice her to spend time with him. He probably ought not to be too surprised that that's what she's interested in. It's a tough lesson, but one which I've seen kids with resources have to learn over and over again.

Yeah, Bruce couldn't take no for an answer, gave Karen what she wanted, and is somehow shocked when it turned out that didn't actually translate to interest in him. Karen's not the one in the wrong here.
Maybe you'd be less disappointed if you stopped expecting things to be Carmen Sandiego movies.
