In some X-Men comics Sabretooth is large but still human size and in others he's almost a giant.
I remember liking the first X-Men a lot in theatre but not so much on VHS. I haven't rewatched X2 yet. X-Men: The Last Stand was really awful, not just because of its script but also because the action sucked as well. I watched Iron Monkey, Wing Chun and Tai Chi Boxer around the same time and it really astonished me how they managed have action scenes, which weren't not just faster and more complex but also easier to follow than the ones in X3. And Ratner is supposedly a Jackie Chan fan, who also is a superior action director to him.

Regarding the Sabretooths, I read somewhere (can't remember where) Marvel's official stand was Movie Creed and Movie Sabretooth were different people.
I actually find the whole issue with the two Emma Frosts more baffling.
Yeah, starting with First Class, I've pretty much decided to just view the films as standalone stories that use X-Men characters. It's a lot simpler than trying to reconcile everything.

I'm pretty sure First Class intentionally ignores X-Men 3 and Origins, since they were done by a different creative team or something.
First Class and X-Men 2 were really good, some of Marvel's best. X-Men 1 I thought was very boring and X-Men 3 was pretty silly. Wolverine was weak as well.
Hmmm...I feel like X-1 was actually the worst, due to being not very fun to watch. 3 and Origins are on the same level, maybe 3 slightly edging over Origins since it didn't have deadfail. The top 2 are leagues ahead of the others though.
X-men superpowers do all sorts of weird stuff, so I don't see what's so strange about just making him grow a bit taller.
If anything, that actually sounds like a fairly logical extension of the healing factor.
