The EU had a really interesting idea that never got elaborated on, the idea that the Jedi needed to be out among the people rather than secluded in some monastery. That's what I'd like to see — go, receive your training, come back prepared to seek whatever life you wish to pursue. Only now you're also a certified keeper of the peace.

We were only focusing on the Council for much of the prequel Trilogy. Wouldn't surprise me if they were out doing oddjobs. There's also the failed-Jedi who were farmers and others that preferred to help out in small ways and not use a lightsaber.

Not just doing good deeds, but actually living among the people. It ensures they never lose touch, and they become a beacon of light and aid to their neighbors.
This also has the side benefit of keeping the order from being wiped out in one fell swoop.
I think part of the Order should do that, but I feel it is also essential for them to have their headquarters for strategic planning and information keeping (such as the "Holocron Library") as well as military functions (though they'd need to seriously improve their defense mechanisms).

Sweet! Seeing a strong woman in the Empire hunting down a good guy. That'd be a nice change of pace from the boys' club that the OT made Imperial command out to be.
