She threw her head back in the same manner as any character who exerts prodigious physical effort to break from his/her bonds/chains, and the artist apparently though that expanding her mouth's size to take most of what parts of her face are visible in that position would be fitting.

Okay because to me it looked like suddenly she was wearing some weird face mask. That makes more sense.
