Snoke is Mace, Ezra, Plagueis, Maul, Palatine, and about a half dozen other seemingly dead/unaccounted for characters. All at once. The hologram from TFA is actually not a physical representation of an actual person, but controlled by a sophisticated swarm intelligence system that averages out the personality and desires of the varies "Snokes".
...On a serious note, I'd say Snoke is Darth Plagueis if he's any existing character. Otherwise, I'd go with someone who has been around for a very long time. Likely centuries, possibly millennia. Heck, potentially the reason he's not technically a Sith is because he predates the Sith, and is instead part of an ancient Dark Side tradition that the Sith grew from.

Maybe. Now, I don't know if this is still canon, but IIRC The Sith are unimaginably old. A being that's been sitting around for 250,000 years or so in the background sounds a bit...implausible. Mind you, there's still ways they could do this, but 250,000 years is a long-ass time even for an immortal being unless he's some kind of truly amazing Bigger Bad. On the other hand, him being such a Bigger Bad might be awesome in its own way.

But it would be cool if he predated the Sith line started by Darth Bane and ended with Sheev and Vader. So, over a thousand years or so.
Snoke predating the Sith is certainly one of my less plausible theories to make an epic understatement. I'm also kind of assuming that the Sith aren't nearly as old in the New Canon as they were in Legends, and instead evolved from a progenitor Dark Side philosophy, which is a pretty big assumption to make.
More importantly though, I think there is going to be some sort of connection between Snoke and the first Jedi temple. It could be as simple as desiring what knowledge there is to be gained there, but it could run deeper. Such as Snoke being the heir not of the Sith, but the original Dark Side users.
Failing even that, Snoke really just needs to be something more then a random Dark Side user that wandered into the First Order and took over.

I just want Snoke to be Snoke. I don't want him to be connected to Palpatine and I definitely don't want him to be a Man Behind the Man of any description to the Empire. That'd be fanficcy as all hell.

Keep in mind that "Lying Creator" is a trope for a reason.
Heck, I still think there is an incredibly small, but non-zero, chance that Jyn Erso is Rey's mother. In spite of the fact that everyone from actresses involved to Kathleen Kennedy herself have explicitly and vehemently denied it. This is despite the fact I never really sold myself on the theory in the first place because I knew from day 1 it was based purely on the fact that Jyn Erso was roughly the right age and had the right appearance for it to be plausible.
I still kinda believe that Jyn could be Rey's mom, but I'm not a 100% on that boat.
Erso possibly being Rey's mom is like, 90% of the reason I care about her.
I doubt Lying Creator is at work here. Never known SW to have had a history of that.
The Empire Strikes Back script had the line "Obi-Wan killed your father" instead of the line we're all familiar with, so that's a case of Lying Creator right there.
I don't get why people want him to be someone the audience/main characters would be already familiar with. I actually don't enjoy stuff like that as it makes the fictional world seem smaller.
Seriously. Part of what made the later EU boring was because eventually everything centered around Han, Luke, and Leia. I preferred the pre-movie EU because everything was fresher, more grand in scale and whatnot.
If it makes for a good story, I don't have any problems with villains being characters fans are already familiar with.
Also, I never really got the the whole "makes the universe feel smaller" thing and I'm seeing that opinion repeated online A LOT and I'm actually really sick of it.
No, the current Star Wars universe is small as hell, especially episode VII and the books arn't doing a good job of expanding on it. All the books have done is just name drop name drop and even more name dropping that amounts to nothing. Hell even the battles and fleets are so small scale compared to the way they should be.
Adding some the old characters from legends back in would expand and build back on the universe, even if they are not doing the same things.
