Just to clarify - Junpei as the new Magician link is not a romance option, although the new Fortune link is.

I had to restart my playthrough of Persona 3 Portable because despite having my difficulty level set to Beginner, I still kept dying. I think it's because I was underleveled but I can't be completely sure.

I will say this about P3P, it's the only Persona game where you can have two Social Links with a single character.
I won't say anything else for spoiler reasons, and as to not ruin the joke.

You can start the link simply by talking to Aigis after class in the month of January, after school resumes following winter break.
(No actual spoilers in the spoilered-out text above, unless you don't want to be told in advance which month the link opens up in.)
It's only available during the last month.

For me, it was Junpei, Yukari, and Akihiko, with Junpei being replaced by Koromaru as soon as he joined.

For the Journey, it was MC, Yukari, Aigis, and Mitsuru/Akihiko (depending on what the enemies were weak to/which was at a higher level) For the Answer, it was Aigis, Metis, Yukari, and Mitsuru.

Speaking of The Answer, is it good enough to justify buying a copy of FES? I've heard that it's long, Nintendo Hard, and devoid of social links...

It was pretty bullshit really. (Oh, and the difficulty is stuck on hard for the answer.) And plotwise, it seemed kind of unnecessary. And that's not getting into the stupid plot stuff in that mode.

The plot stuff in The Answer helps explains some of the glossed over plot and backstory bits for the Journey, explains the ending and why it was important. And even the most stupid of the plot is a.relatively brief, and b.sits better with me than some of the stuff P3P did.
As for the dungeon crawling, yeah. It's dungeon crawling. If you like dungeons, then you'd like playing the Answer. I can't see how one would hate The Answer's gameplay if they managed to make it through the Journey. Despite it defaulting on hard, I didn't have much trouble outside of a few bosses, and even that is more due to the fact that 80% of the non-storyline bosses have "Avoid Weakness". The truly hard bosses didn't really appear until the last couple of dungeons.
EDIT: HOWEVER, if you already own a different copy of P3, such as P3P, I wouldn't recommend FES. (The same way if you already have FES, I wouldn't recommend P3P) I don't believe in really buying the same game multiple times.

We don't like being PMed.I switch my party around a lot because (aside from Ken, who I mostly can't be bothered to use) I like keeping everyone at more or less comparable levels, so I try to use everyone. Akihiko is a mainstay, though, and my most commonly-used combinations are probably Akihiko, Yukari, and Junpei, or Akihiko, Yukari, and Mitsuru.
I don't really recommend FES if you already have P3P. The Answer is the only thing the former has that the latter doesn't, and it doesn't add that much in terms of story aside from some clarification to the ending of The Journey. If you really like Aigis, maybe.

The main problems that I had with The Answer, is that it was a huge grindfest, and that the gameplay got really tedious at times. Personae (or Personas, whichever you prefer) were a huge pain to level up as well. (Never will I take Social Link exp bonuses for granted again.) With The Journey, the pace was broken up so I didn't have to do Tartarus runs all the time, as much as I like doing those. Doing nothing but dungeon crawling made the gameplay quite stale.
If you only have the vanilla version of Persona 3, by all means get FES if you want. If you have the PSP version, I don't recommend getting FES, since the PSP version has most of the additions from FES aside from The Answer. (Unless you really hate the visual novel asthetic or something like that)

I don't really mind the visual novel aspect (indeed, I love visual novels in general) but occasionally it's kinda hard to tell what's going on.

7 times outa 10, it's not that you're under leveled, it's that you need to fuse some new personas.
XP granted for befriending a giant magical spider!I did that too. Are you sure I wasn't underleveled? My character was only around level 7 or 8 by the time I got to Floor 22ish.
...Definitely underleveled. Try beating at least most of the enemies on a floor before moving on.

Incidentally, my party of choice is Yukari, Mitsuru and Akihiko, as I have said many times before. I've gotten through the entire game with those three.

If you can make it to where you can shop and grind though it gets pretty manageable till the very end.

The FMC has those links replaced with party member slinks most of which can get the romance on if ya want to.
IE: Junpei takes the place of Kenji
Kenji does show up in other slinks and we do get more backstory into his slink problem (Minor spoilers: namely we see who he is lusting after and adds facts that the new chariot S-Link girl is after him.
