hashtagsarestupidI know it would be a technical nightmare, but I'd like to see dynamic physics for chunks of blocks. In particular, I'd like to see a Hinge block, which would rotate freely around the planes of attachment when attached to another block, following the rules of weight and leverage. Any blocks attacked to the hinge would also rotate. This would allow large doors, rotating platforms of death, and even catapults. To make especially cool constructions possible, it would also require a redstone powered Motor block, identical to the hinge except powered rather than freely-rotating, and also some kind of non-rotating block (maybe Obsidian) that could be used to define the boundaries of a door while still allowing the door to fit flush into its wall.
Combined with Pistons and Redstone circutry, those three blocks would allow construction of fully-fledged platformer dungeons of death, not to mention ferris wheels, construction cranes, and the like.

Would make a windmill. the 3 stone blocks on the right would spin freely, as the Obsidian block is nonconnecting and allows it to spin freely past the one face where they touch. The stone on the left cannot spin, because it borders the obsidian on 2 faces.

I would like a way to reliably farm animals. We've got persistent dogs. Make it so you can created an actual corral that you can use to raise things like pigs, cows, and sheep.

I'd like: Rain that causes water source blocks to show up on sloped tarrain. They'd linger after the rain stops for a period of time, then disappear.

Craftable furniture, yes.
Rope. You attach it to a block, and you can climb down it like a ladder. Climb back up it, too. You can choose to leave it there or pick it all back up, too. It could come in various lengths - all requiring lots of string and maybe an iron bit to affix it to a block of suitable strength; so it wouldn't stick to gravel, dirt or sand.
More food items, yes. Like, bits of chicken, beef and lamb. We can already kill those critters and all we get are their hides? LEEROY NEEDS CHICKEN.
I could go for a horse. Add a saddle, and you can ride them and control where they go, so you can cover terrain quickly (good for outrunning spiders). They should have inventory space (euqal to your own capacity)on them as well.
Carts that go over land without track. Hitch them to a nearby cow, and the cow follows you around with a double-chest of stuff. Add that to horses, and you can carry two double-chests worth of goodies.
A bigger, more durable boat. With storage on it. Might need a larger crafting grid for that. Hmmm...
Larger crafting grids for more complex or larger items - 4x4 or even 5x5. You would need more types of material than just wood to make it, though. The 4x4 would be made on a 3x3, with wood, stone and iron, something like that.
More types of metal. The ability to smelt iron into steel. Turninf redstone dust into solid chunks of redstone, possibly for use as an ingredient for more powerful circuitry items.
The ability to craft up one-block logic gates, as opposed to running lots of resdstone and redstone torches all over the ground.
True vertical redstone wiring, right up the walls. Like ladders.

hashtagsarestupidAnother thing I want is Bragging Rights Rewards. Like assorted uber-rare mobs that drop ingredients for cosmetic clothing items, or exotic ores that only spawn in every 100th chunk and can be crafted into suitably impressive blocks. Common enough that anyone could (with effort) expect to find something, but with a wide enough variety to them that no one player could reasonably expect to find all of them in a reasonable period of time.
It would give a reason to explore, and encourage trade by providing things that can't be merely grinded or farmed.
Doubly cool if a chunk of solid blocks supported only by ropes swings naturally. Combine with the hinge idea above and you have everything needed for a fully-functional Creepuchet!

Uh, did I say something stupid?
I know you can make canals and the like, but It would be good if you could make pressurized water systerms with taps and pumps and things.

hashtagsarestupidThe main problems with more realistic water are the vast processing power required and the tendency for devastatingly unstoppable floods underground.
That said, I agree that it would be cool. Compulsive miners might be annoyed at the need to build airlocks all the time, though.
<><Dwarf Fortress deals with pressurized water all the time. It can be done though you'd want to give some warning before chopping into an underground lake. In DF stone can be hot or damp indicating the presence of magma or water respectively.
