I'd recommend you watch the anime in this order: 1. Cowboy Bebop, 2. FMA: Brotherhood, 3. Gurren Lagann, and then move on from there.
The reason I say this order is because Cowboy Bebop is the normal length for an anime (26 episodes) while still having top-notch quality. FMA: Brotherhood second because it's 5 seasons long, and while it is certainly worth it, I personally would watch the shorter anime first. But either one first works fine.
Gurren Lagann third because a lot of Gurren Lagann's quality comes from playing with anime tropes and being over-the-top and generally hype. You'll want a grasp on more "normal" anime before touching Gurren Lagann, as it would set a weird precedent to begin with.

I know a little bit about it from Regular Show referencing it and a bunch of other giant robot animes in one episode. It has some dude named Kamina and something about a drill piercing the heavens and Kamina isn't in the entire series.
And something about fusing with the universe.

I have a message from another time...Bebop is not on Netflix, sadly. Though most of FMA: Brotherhood is.
I highly recommend aiming for watching the English Dub of Bebop. It's better than the japanese dub (even the author believes so).

Seconding the recommendations of Cowboy Bebop and FMA: Brotherhood. Also, the recent One Punch Man series has been pretty good, it's a parody of the superhero genre.
Just want to add, non-RPG characters do have that issue. Link doesn't get to use many of his more powerful abilities (turn giant, turn into a hyper-powerful being, slow down time, etc.) since it removes him so much from who he usually is. Guys like Tails & Knuckles also didn't turn into their most powerful forms since they wanted their fights to stick to their more signature moves.
The main problem with RPG characters is that it's very difficult to quantify their abilities, and few can agree on what makes sense. Are they literally exploding a building or suplexing a train with that move? The strength stat of a character triples over the course of the game, does this mean that he's literally thrice as strong, in-story? Stuff like that.
You made my point better than I could.
It gets even harder to quantify when those characters are customizable. What loadout do you use? What's the "canon" set of materia or "canon" equipment or "canon" character build? Any part of the character's skillset that is subject to player choice is impossible to thoroughly define.

Now I want to see Hero of Time Link in particular in a Death Battle. Can you imagine the cool fight that we'd get with him using all the masks, including Giant's and Oni Kishin Fierce Deity?
Persona charcters expect maybe the main protags are very easy RPG characters to put into DB
It also helps that Persona has fighting game spin-off sequels.

So what Persona characters would be good to use? I remember people talking about Yu Narukami vs Jotaro Kujo before. That might be good. They're thematically similar but have very different abilities which keeps the fight interesting.
Aigis is a another good candidate imo. Just don't really know who is put her up against.
I've also seen Summoner!Yuna as a potential opponent for Narukami.
No chance in hell it would happen, but still, I'm wondering who would be a good opponent for No-Name. We don't actually see him do much, but the guy defeated his father-mother (who singlehandledly destroyed an universe, by the way) without suffering any injuries. While being in his (late) teens and inexperienced.

Cowboy Bebop, Gurren Lagann, Yu Yu Hakusho, Baccano, in that order. And maybe Flame of Recca, if you can tolerate the dub. I don't know if you're ready for Fooly Cooly, but then again, who is.
If you like Dragonball Yu Yu is right down your alley, if you're looking for copious amounts of awesome, Bebop and Lagann.
