They're all equally official, more or less. It's a weird situation that I'm not knowledgable enough to explain. Suffice to say out of the ~5 different manga versions, BMHIR is generally considered to be the best.

I'm finding Female Magician oddly adorable, for some reason. Her quietly snarky personality seems quite entertaining.
12 episodes... no resolution... did this anime get canceled?
Nope. There's just not enough material to work with.
Cancelled is the wrong term for it; it was always one of those 'do 1 cour and cover as much material as we can, and then hope it does well enough to financially justify a second season' shows.
Which describes an increasingly large percentage of adaption anime these days. It's gotten to the point where it's a refreshing surprise when something like Shin Sekai Yori is self-contained.

Is The Unlimited one of the same kind of shows that just fizzles out after twelve episodes... my favorite shows this season seem to just fade away without a proper climax.
The Unlimited had a proper climax. It felt a bit forced, maybe, but it had one.
I've watched the anime "Maoyuu Maou Yuusha" and now I'd like to read the light novel or the manga, knowing the tv series might not be finished, or at least not in the near future. So my questions are, has the light novel been fully translated into english and completed? And the same with the manga, has any of the versions been finished and fully translated?
I'm not sure about the light novel, but the (main) manga is ongoing. It's a little further than the anime, but not a lot. I'm not sure about the other mangas.

That's not quite correct. I believe that there are eight novels. However, Maoyuu Maou Yuusha "Be Mine Hero" "I Refuse!" is relatively new, 25 chapters in. It's being translated as they're releasing chapters. Right now, going off of the titles of the original novels, they may have just started moving into stuff from novel two with this adaptation. There are five main novels, and then three side novels that detail Hero's companions, the Female Magician, Archer, and Female Knight.
That was gleaned off of the wikipedia, so take it with a grain of salt if need be.
I also read the manga has 7 volumes on wikipedia, and I thought volumes are further divided into chapters. So this would mean, that all the chapters of the main manga to date, have been translated?
So far all the chapters of the "Be Mine Hero" "I Refuse" have, and many do consider that the main variation and the one to follow. However, there are I think like five mangas running simultaneously for it, a couple of comedy ones, and a couple of more traditional ones.
So I've watched both Maoyu and Spice and Wolf now, can someone suggest something similar?
You mean manga/anime related to economics? Off the top of my head I can think of [C] and Billionaire Girl, though both are quite different from Maoyuu and Spice.

There's the confession scenes, which are lol-worthy and heartwarming respectively. And then there's the multiple inheritences and one of the Blue Demons being chosen. Oh, Crap! moment there.

The side story tells more about Female Magician and her adventures in the demon world. She even has a demon sidekick name Feather Girl.
So it turns out Female Magician is the result of the Magic Association creating Artificial Heroes where a lot of children died being trained with her, the Silver Mage, and her two older sisters, White Mage and Indigo Mage, being the only survivors. But in the end Sliver survive while her sisters died but not before telling her to leave the Association and join Hero's party since the Association only wanted a powerful magician they could easily control. (If you haven't guess by now, Female Magician's split personalities shown in the anime are actually her older sisters.)
And then we meet, Red Mage, Female Magician's Evil Counterpart, a product of Magic Association second attempt to create an Artificial Hero. While Female Magician is stoic, Red Mage is very expressive. However, she's also insane and has been taught to obey the Pope and never question his commands and it's her duty to kill all demons.

The work page currently says the official manga adaptation is titled simply Maoyuu Maou Yuusha. However, I've seen another source which says that the one subtitled "Be Mine, Hero!" "I refuse!" is official.
Originally the page here also said BMHIR was the official one, but it was changed on the logic that MMY was published by the same company as the novels.
Which is it?
