I'm not going to say that they're objectively the best, but I've always loved SSBM's explosions.

Command And Conquer and Metriod process grand explosions but one of my favourites has to be the doom of the Macbeth train in Star Fox.

Since nukes be spoken of, do not forget Sid Meier's Alpha Centauri which process the creater/sea making PLANET BUSTERS! Overkill is a understandment when you take out more then one of the cities of you foe.

I think a downside of the current focus on realism is that we may actually see tamer explosions since most of the damage from real explosions comes from the invisible blast wave, fuel air explosives aside.
Really, the current focus is more on looking pretty than on realism, though realism is generally the word used.

Seconding Total Annihilation on grounds of being the only game I can think of in which sending your commander on a high-explosive suicide mission to the enemy base in the first few seconds of the game is a viable option. For certain definitions of 'viable'.

I'm partial to the all-consuming, amazingly violent explosions in the original Aliens Versus Predator. Especially considering that game's majestic gib system.
