We forget sometimes that Gordito has a gun, and bullets don't care if their target is on fire.

Also, thick boots that don't catch fire or transmit heat so easily.

Bullets can grab people who are on fire. I must add this to my tactical notes.

Technically sufficiently hot fire could vaporise bullets (which would then burn up quite quickly, imparting little, if any, kinetic energy).

True, but fire hot enough to vaporize bullets would no longer necessitate grabbing the person who is on fire, because the fundamental drawback of being on fire would be kicking in a lot faster.

Fire hot enough to vaporize bullets would incinerate everything in the vicinity, meaning that Doc and company would already be dead long before anyone had the chance to fire a bullet at anyone else.

No, because fire only affects things that are directly touched by the flames.
