Doubly hilarious as all the other cooks are Mexican ([[LampshadeHanging "Mexico is the best part of France"]]) and Anthony is OneHeadTaller then all of them. A 4-star kitchen has a large number of cooks working on a small number of very complicated dishes each, ensuring that every detail is perfect; Les Halles has one cook per station, each cooking a large number of simpler dishes; the challenge is ''the volume''. Anthony Bourdain thinks that 4-star cooks can't handle the pace of his world; unfortunately, Ripert was able to rise to the challenge better than Anthony himself.
** In the Provence episode, Anthony volunteers to cook a meal for his local friends (including the sister of the woman whom he named his daughter after) and expresses considerable trepidation, given the excellence of Provencal cuisine and cooks, that he's bitten off more than he can chew. Happily, his efforts are received with great favor (particularly as Anthony made a conscious effort to stay away from trying to ape Provencal specialties).
** In the "Kitchen Techniques" episode, while it showcases different chefs teaching how to cook various dishes, Anthony himself teaches how to make beef bourguignon. He describes not just the what needs to be done, but ''why'' it's important to do those things.
