''MetalWolfChaos'' has a level near the end where you duke it out in a casino at the start.  
also ''FalloutNewVegas'' has this in spades.  Actually,  now that i think about it,  these types are rather constricting.  A ton of games fit type two but type on is niche.  I think I'm misunderstanding type I as type II in "realistic" games tend to have all the elements you have down as type II.  A Sandbox game with a casino in which you can't play the games isn't very sandbox..y.

The big split for me is background vs foreground.  By which i mean In some (''MetalWolfChaos'', Rainbow Six and so) on you can't really interact with the games beside maybe destroying them for money or using them as cover. while others have a programed in side games to amuse you. (''FalloutNewVegas'', etc.)

Actually take a look at the viva las vegas page its got some more to add ''VideoGame/DukeNukemForever'', ''DragonQuest''... actually that last one should just be moved over here whole hog.
this definitely should be a thing.
