I think that, to establish this as tropable, we need to consider how it relates to a large and fuzzy body of existing tropes.

First, I wonder whether this is sufficiently distinct from FlatEarthAtheist. Just as that trope doesn't have to be about belief in a flat earth, it might not have to be about atheism -- might it not be about holding to some sort of philosophical belief (including monotheism), in spite of it clearly not making sense in the setting?

Alternatively, this is at least a sister trope to, definitely overlaps with, and could maybe-sorta just be part of, NoSuchThingAsWizardJesus.

If tropable, though, I agree it needs a clearer title. Maybe "My Religion Right Or Wrong", or "Selective Theism".
