The entry doesn't say New York is predominantly Catholic, just that it's more Catholic than many other parts of the US. If we wanted to add a further disclaimer that the New York isn't necessarily as uniformly Catholic or tolerant of Catholicism in real life, that's certainly fine, but that doesn't seem like it means like the trope doesn't apply in terms of how it was written on the show.
