Should we make a mention that there is some Truth in Television? As in, fiction often teaches us that sex is something that is deeply emotional and done for very profound reasons, while in reality people have a biological inclination to have sex at every opportunity. Realistically, a sex scene could very justifiably be used (say instead of dialogue) just to establish that the characters have a bit of chemistry. But because we've been taught that sex is profound and important, we feel that the sex scene is gratuitou.

Let's not do that. The trope is not "sexual intercourse without deep emotional factors happens".

I've expanded the scope of this trope so that it doesn't require a Wall Banger be involved. Characters can have a perfectly legitimate in-story reason to have sex- that doesn't mean we have to actually watch them do the deed.

Doesn't that mean any sex scene applies?

(Also, if that's the definition, there's a hell of a lot of complaining that needs to be stripped out).
