Why is there just one page for the book and the film? Shouldn't there be separate Literature and Film pages, particularly since most (all?) of the tropes on this page are about the film?

This isn't unheard of. It's usually if the page grows large enough that we split.

Plus the number of tropes listed for either work does not prove anything other than tropers just happened to list more for the film than the book. If any troper has read the book, feel free to add more tropes from there.
