As below, Ho Yay is about fan interpretation. Ruby and Sapphire are firmly canon now.

The creators confirmed the relationship between Ruby and Sapphire was romantic. Do they still count as Ho Yay?

Probably not, since Ho Yay's specifically about YMMV interpretation by fans.
A canon relationship would fall under an objective relationship trope.

Should there be an explicit mention of the canon gay stuff (Ruby and Sapphire's relationship, Pearl's feelings for Rose) up top? Like, that's visible when looking at the page itself. (It's 1 AM, I'm having trouble wordsing properly. :P) I think it'd be useful, but that's just me!
