Two things to note:

1. I heavily disagree with removing the Canon Name in brackets because it was a helpful way of organizing and making it clear that this had also covered all adaptational instances of the character in these sheet's tropes, so even if there's an insistence that all game instances have to be marked under something else, I find it hard to believe that anyone is going to the effort of splitting everything else into a different page just because they can't stand the sight of seeing a name violating a supposed rule. All versions of the character outside the game use this name and are covered here, with the only exceptions of Learning With (a gag spinoff that later made very clear featured a separate character both in and out of universe) and Grail League (a highly debatable Alternate Character Reading that is never actually said out loud by anyone that has also been marked as a seperate character elsewhere), which is why I'm arguing to maintain the bracketed name. Other games like Honkai: Star Rail or Persona 5 covering similar cases are able to accept names never stated in the game for a nameable character as a useful identifier, so I don't think identifying them explicitly harms anything.

2. Let's just go over every option for the sake of saying a discussion was officially done if anyone wants to debate which name should be used.

"Protagonist"

  • Pros: The literal translated version of 主人公 used on the site, which did not receive an English translation for two years and was simply used as the first placeholder and stuck by Grandfather Clause.
  • Cons: Not the official translation. NA's site calls them "The Main Character".

"Master"

  • Pros: The official Canon Identifier that almost every Servant refers to them by.
  • Cons: Literally a title shared by at least 15 characters in this work alone, not even including the, at least, 50+ characters outside of it in the same franchise. My opinion is this is the least feasible of any of them.

"Last Master (of Humanity)"

  • Pros: A longer version of the title used by narration and others to refer to them for clearer delineation from the other 60+ characters.
  • Cons: The longer title is fairly unwieldy and its shortened version runs into having to explain at length context for 13 different characters as to why they currently don't count, 7 of whom are NA spoilers for another year at minimum.

"Ritsuka"

  • Pros: I'm actually not sure if there's any real argument for it besides Western language conventions usually means most people default to first name when referring to characters, rather than their last. (ie. Editors mainly do not refer to Rin as "Tohsaka", despite that being her main identifier for 99% of FSN or FHA if we have to argue to adhere to strict textual fidelity for writing wiki entries.)
  • Cons: One-Steve Limit with Ritsuka Suse from Witch on the Holy Night. Not using it future-proofs for a future Crossover.

"Fujimaru"

  • Pros: Used in promotion for Countdown to 6 videos by Aniplex US, the official translators and publishers, whenever their name comes in story clips. Said clips do not actually gender them as far as I can tell. This implies that they consider it an official canon for the game itself rather than using joke insert names like Atlus tends to do with their promotional material or the title of Main Character. The only argument to its invalidity is that it was not literally implemented into the game, which is such a level of anal-retentive that I can't get on board with this.
  • Cons: Grail League's Fujimaru may or may not cause issues in the future.

"(The) Main Character"

  • Pros: Still in use as one of Aniplex USA's official references to the character. Allows for a very clear and direct indication of who is being discussed.
  • Cons: I have no idea if we need to use the determiner literally every single time we use this title, hence parentheses. If we argue for complete textual adherence to anything Aniplex USA dictates, then the determiner is required. Using it requires cutlisting this page, remaking it under this title, and revising 70+ pages, which is mostly listed here for the sheer amount of work put in here.
