Seems more like an issue with the keyboard than with us.

Just coming here to ask about this. Any idea how to fix this?
Answered my own question.
Go to Settings, select Keyboard, find Smart Punctuation, turn it off.
The apostrophe doesn’t cause the markup for italics and bold.
