Possibly Flesh and Blood with Rutger Hauer?
There was a rather accurate medieval movie I remember from my childhood. I remember a siege happening upon a castle where they dropped a stone ball through a chute and it removed several soldier's heads, with no embellishment or fanfare. I don't remember much past that. It was set upon the English Isles. 2009 latest release date for home viewing, more probable 1998 or slightly later. The siege was shot sort of like Saving Private Ryan's beach assault scene, with little embellishment and more showing the horrors of a medieval battlefield siege.
