Married Chrom and Olivia. Not worth the effort honestly. Now I have to dance Olivia up 10 or so levels so she doesn't ruin Lucina's stats.
Do the parents' current stats affect the child's caps, or just their starting stats? My Olivia was very weak when she produced Lucina, but Lucina has been trained into one of my best units by now.

Yeah, that's it. The kids have their own bases that are averaged with both parents, too, so you're never really ruining things, just making 'em different, Jenny aside.
Generally speaking, Lucina's best mother in terms of skills is a difficult tie between her getting access to the Aegis/Pavise combo for defensive builds and Olivia for supplying both Swordfaire and Lancefaire and upping her strength cap a fair bit.
Robin, of course, is not included in the calculations because they're always awesome.

Actually, the best mom is practically a tie between Sumia and Maribelle because both have access to the Sage class. Physical loses out to magic in the long run and Olivia is the weakest Galeforce option in terms of magic capability.

Eh, I always reclass people back to as close to their original classes in the end anyway, so you aren't alone.

Laurent usually ends as a Sorcerer and either Inigo or Severa end as an Assassin, whichever one isn't being a Hero, but other than that, everyone ends as a (promotion of, when applicable) their base class.

I always find it fun to reclass the kids into a father-inherited class first. Like say...Paladin!Owain from Frederick.

I just make them whatever class I want to. In most cases, that's somewhere at their original base class, but in some cases, especially the children, that class ends up being a different class from their base class.
