Akamatsu had yet to settle on a name (Home country, Mainland, magical land), and thus went with something akin to Terra Incognita as SCM mentioned. Further more, her castle is clearly based off of the architecture found in Megalo, which Akamatsu included in his notes.
It's not unlikely Evangeline built it after she was to Megalomesembria at least once.
And if I were her, I wouldn't put my castle in the magic world, on the simple basis that there are lots of people looking to ruin my day there.

For example I wonder if its use as a generic curse word is limited to Argentina (so unique to that cultural circumstance) or is something wider found in the Spanish-speaking world.

Fortunately, the duo still managed to make it to the public transit on time. Chisame scowled, and harshly waved her finger in Misa's face. "You just had to marathon that random shitty ecchi anime last night, didn't you?! We managed to get by this time, but...!"
For much of the ride, Chisame continued scolding her roommate, while Misa kept uttering out apologies even as she continued fixing up her uniform, oblivious or uncaring of how the other students were looking at her.
So caught up were duo in their domestic drama, that neither of them noticed the young boy in the business suit riding the next rail-car over.

Rather than smart, I'd prefer to be wise. It would let me be silly more often.Well, there was a time Eva was willing to openly war with some nations (I think it was actually in MM) using that giant puppet army she used to have back in the day. She even stated that the reason she built a castle in the first place was because of all the bounties she had on her head. "Any first rate mage would have several residences like this." and all that.
Her castle is really classy, though, so I'd assume it's less "Fortified Place to Make War from" and more "that place I go to play checkers in peace".

In Venezuela, 'negro' is actually an endearing, affectionate term one often uses regardless of race. Marriages will often refer to each other as 'mi negro' y 'mi negra'.
Then again, the words used in Venezuela often have wildly different uses and meanings than those Argentina has for them. 'Pendejo' in Argentina means 'kid' or 'little boy', but in Venezuela is an extremely insulting way to say 'imbecile' or 'moron'.

Although what they also found shocking is just how aggressive spanish swears are in comparison to english ones.

Actually, much like in English, any insult can be used both as a compliment and as an insult, except a few.
I mean, we even had a band named Los Violadores. And they were popular.

Either that, or when she transferred it she left the walls and other defensive armaments behind. Or MM fortress defenses are primarily magical. That tower Asuna is being kept in during her dream of Ala Rubra after the School festival was similarly devoid of walls and such and it seems to be some kind of border fortress.
Of course, prior to UQ Holder's bullshit, that category consisted of one person anyway...

Well, the place Eva's castle in now is clearly jungled. No idea if she ported/simmed the landscape to match its previous location, but its on a pretty big clifface surronded by water and the like. It doesn't actually look like you can access it just short of trying to drop in from above.
As for your other point, kinda makes you wonder why the tower she was locked up in wasn't constructed near the center to begin with. Unless the field they can spring up is that big, it'd only really provide cover from one direction, and when the enemy is flying right above your noggin firing death at you, that isn't probably a great idea. Unless they're just that scared of her to keep her near anything.
Speaking of Eva's castles, I prefer the first one with the beach over the second one. We saw Eva naked in that one...

Wasn't that the diorama Theo brought for the boys to train in, or are we talking about her original resort. Don't recall it having a beach, since it was just a huge honking tower with a swimming pool.
Still, its funny to imagine Eva going "Well, its time to get my castle out of my closet. Ooooh! I can take my desert and arctic tundra with me while I'm at it!

Incidentally, Evangeline is more than six hundred years old. She was probably there when the British Empire basically owned the world, and given that she is Scottish herself, IINM, it's very likely that she would have such bouts of casual and unintentional racism, simply because of the same reason old people do, even if they're not racist, or at least not intentionally so.
Old habits die hard. Old men's old habits die even harder.
Africa is indeed just... Africa in Spanish, for the most part.
A funny thing I'd like to point out, if you could speak Spanish and come to Argentina, you would get the misconception that we are the most racist country ever, since we use 'Negro' to insult everyone regardless of skin color or social standing. Yes, everyone. Even the president.
