I listen to Massive Attack, Urban Species, Sneaker Pimps, Smoke City.. and Sia's earlier stuff is essentially this.

If you're looking for something kind of underlooked that's in this vein, I'd recommend checking out Blue Wonder Powder Milk by Hooverphonic. From what I keep hearing they've gradually turned into more of a general adult alternative band since though. Maybe you'd remember "Renaissance Affair" from a car commercial.
By the way, if you pay any attention to the words of that song, you'll very quickly figure out that they love Word Salad Lyrics, or at least did on the one album I've heard.

It makes up almost a quarter of my record collection, with everybody from the genre standards (DJ Shadow, Portishead, Massive Attack) to people who I'm fairly certain only released one album (The Slip).
As for whether or not DJ Shadow is "truly" Trip-Hop, Endtroducing... certainly was, with a healthy dose of turntablism thrown in, all subsequent albums are up for debate, and The Outsider is Hyphy.

Kind of as an umbrella term for all the kind of things (including trip hop) you find on 'chillout' compilations, really.

It's a very broad term, but I like most of it.
