yeah a lot of bosses, including astaroth, go mental if you protect against their attacks. you wanna make sure you leave at least one of his elements open to hurt you, cuz otherwise he will just spam almighty.
For big bad Beelzebub in IV I would say get someone who can use healing, someone who can block physical, and someone who is immune to sickness. Also try fusing someone who can use Doping like a previous user suggested.

I do remember being told there were demons like that (who punish you for blocking their attacks in anyway) so I'm wondering if it's worth it, or if I should just use dudes who only resist?

Their attacks need to hit at least one active person- Resistance doesn't prevent hits, so three null-repel-absorb members and one resistor is optimal.

Those two seriously deserve some happiness but on the other hand SJ Neutral is my favorite ending in the series and I'd kind of hate to see it reduced to a runner-up.
