A few thoughts:
1. I didn't think Carol Baskins killed her husband and was primarily upset with her due to the fact that she seems to have embezzled her first husband's estate from his family. However, apparently her fiance between her first and second husband filed a restraining order against her on the basis of, "She admitted she killed him." That and her first husband did file a restraining order and feared for his life before his disappearance—which was strangely left out.
2. Kirkman's interviews with David Spade and in the newest episode talk about how Joe Exotic was a worse person than the show depicts and was particularly cruel as well as violent to the animals. He also hates himself for trying to depict Joe Exotic the same way as the Netflix show arguably did: as a entertaining wrong antihero.
3. I'm 100% sure Joe burned down his crocodile zoo and then burned Kirkman's studio down due to the similar MO and the fact that the latter had a bunch of actionable criminal activity on film.

If we're to talk about the stuff that's apparently been left out regarding Carole and her first husband
- He had dealing with Costa Rica organized crime
- He was, by all accounts, a terrible pilot
- He was not, as the show claims, rich when they married. He became rich while the two were in relationship.
- His own divorce with his first wife (And he was a womanizer) ended up ostracizing him from his own children and part of his family.
And yeah, one might go "That's what Carole says". Yes, that's the point. Why is her version presented less than that espoused by a convicted criminal and animal abuser.
Lets not kid ourselves here, this a documentary that's been very... deliberate in their presentation. The producer straight up admitted they cut out Joe's rampant racism (Coz it makes him far harder to like him), and much of Joe's documented animal abuse to make it seem more like a "She says he says who knows who is right" thing.
Heck, the show doesn't actually point out that Big Cat rescue only accepts tigers from law enforcement, or private owners who want to stop owning cat, and in the later case they have to sign a contract with that that prevents them from turning around and buying more big cats, or even taking pictures with big cats. In an effort to again, point Joe and her as the same.
And then there's the misgendering. The show's entertaining but the more one digs the more its clear the show wasn't super representative or honest.

They were also deceptive about the habitats at Big Cat Rescue. All the cats at BCR have what are called "feeding lockouts". The documentary showed the cats eating in the feeding lockouts and they zoomed the camera onto the lockout to make it look like that was the whole enclosure. There are live webcams of some of the BCR habitats at explore.org, active 24/7, that show how just much space the cats have.

What happened to Travis... that was truly horrifying. Also, in episode 8, when Joel Mchale is interviewing everyone, Joshua goes into more detail what it was like witnessing his death.

Actually, I would outright dismiss any charges against Carol if they just came from Joe. I mean, why believe an animal abusing meth-dealing criminal?

Even wilder, in the 2002 restraining order request, Bakyal states that when he asked Carole what would happen if her husband Don were to suddenly return, she allegedly replied, “Dead body cannot talk.”
Bakyal’s restraining order request, just like her missing husband Don’s, was denied.

I'm starting to think that this whole thing has become such a joke that the poor cats and their well being are getting lost in the shuffle. According to the creators this series was made for the cats' protection and to shed light on a serious issue, but I think that's far from what's actually happening, as we can see with things like #Free Joe Exotic and people wanting movies and merch etc. Even if people are "joking" the cats clearly aren't the focus of all of this anymore.
"In 900 years of time and space I've never met anyone who wasn't important."Well that's somewhat their fault as they focused more on the antics of Joe and company (and cut out parts that made Joe look less sympathetic which is just fucked up) than on the plight of the animals.
This pretty much sums up how messed up the whole thing was.

Even that theory doesn't really give a reason to burn down the studio. Joe was already becoming hostile, if Rick had the backups he probably could just leave, and sue Joe for breaching their contract. Burning his footage gives him nothing.
