"Sew", apparently, is pronounced "sow" (rhyming with "tow"), and not "see-w". By extension, "sewing" is pronounced "sowing", not "see-wing".

tbh I'm still not entirely sure whether or not "Ubisoft" is "you be soft" or "ooh be soft" because the company has used both pronunciations in different contexts but because the former is more natural that's how I say it
also until high school I thought "papyrus" was pronounced as written (i.e. "pap-ee-russ") and not "puh-PIE-ris"

Also I've always pronounced tyranny as tie-ranny as opposed to tee-ranny.
I also used to pronounce "tyranny" like that. I've always said "envelope" like [ON-vell-ohp] instead of [EHN-vell-ohp]. And I tend to pronounce "either" and "neither" as [EYE-thur] and [NYE-thur] instead of [EE-thur] and [NEE-thur].

both of those pronunciations for "envelope" and "[n]either" are correct. So it's not like you were/are pronouncing them incorrectly.

This doesn't happen often in spanish, cause (almost) every letter or combination of letters remain phonetically consistent across every word.
