Master of Shipping and Sadism.I wanted to portray elves like that because normally they're really weak and can't take a punch, so I thought it'd be cool if elves were more forest-y type dudes who were really good at surviving and hunting, like animals. And since a lot of animals have backup organs and stuff...
Granted, they're technically only as durable as humans, so you can stab them and it would have just about the same effect (i.e. pointy end goes in other man). It just wouldn't kill them. To an elf, a stab wound is a minor inconvenience. Getting shot in the heart with an arrow is "having a lousy day". Decapitation is really the only way to make sure an elf is dead, and even then you have to hack through two spinal columns.

Allurand and surrounding world loading, 28%...I'm largely exaggerating for comedic effect. Getting stabbed still hurts, and headshots would kill them, yeah. And it's not as bad as you're making it out to be. They're perfectly killable, it just takes a bit more effort, and elves having all these redundant organs should more or less be common knowledge. Double tapping is in full effect here. Plus, most elves aren't physically strong enough to challenge anyone to 1v1 combat. That's why dark elves are such an anomaly in elven culture, because they've effectively traded a portion of their magical abilities for more strength.
To get a better idea of what I mean, this should give you a good idea of what an elf's skeletal structure looks like.◊ They have at least two of every organ as well, but beyond that they're no more difficult to kill than anyone else. They don't have rhino skin or anything.
