Theories on what they're about:
Return to Mewni: Star and Moon fight Toffee/Marco finding a way there. Moon the Undaunted: flashback to Moon and Toffee's past.
Puddle Defender: probably where the crocodile scene comes from. King Ludo: Ludo gains the upper hand in the battle?
Book Be Gone: The spellbook is destroyed and Ludo is defeated. Marco and the King: Everyone celebrates the "victory" and Marco bonds with River.
Toffee: Turns out the celebration was premature and Toffee comes back stronger than ever.

Ludo has taken over Mewni and is keeping River prisoner. Marco and Ruberiot are leading a group of Mewni freedom fighters. Toffee killed Moon's mother in the past. "Eclipsa is alive, and I made a deal with her/need to deal with her" (the audio quality is too bad to tell for which is correct).

Season Three is going to get even darker.
The curtain of skulls is a nice touch.
Gosh, this really shows that they are emphasizing the Myth Arc and are going to hold no punches.

I'm actually glad this show decided not to always be so Denser and Wackier. Now it reaches Darker and Edgier territory.

It's obvious from the clips that some of the earlier brightness is going to be there, but as you said they are taking themselves very seriously in the next season.
I've seen the first one already and the symbolism in it is amazing. Like how under Star there's a formation of the other half of her wand. Or how the top of the goo where she's standing looks like Toffee's hand. Oh and the butterfly shape aura coming out of her wand.
I dunno if the second poster has any symbolism but all I can say is that Eclipsa gets creepier and creepier with each new reveal of her. One thing I did notice is that Eclipsa's hand is see-through.

For me, the second poster conjures up the image of a mother happily coaching her young daughter in shooting innocent people while the daughter stares in utter horror at the atrocity she just committed........

Except Eclipsa isn't Moon's mother, but one of her grandparents.
Gotten into similar debates about this on Reddit with regards to how the whole Jarco subplot and the development for Marco, Jackie, and Star and how it's developed and handled.
