The plot though... I was thinking of the PC's just sort of minding their own business, conquering a few uninhabited planets here and there, when these crazy SOB's show up almost out of nowhere and try to conquer US.

I like that idea better. I don't really want to play the evil conqueror. That's what's normally expected for eldrit h things, and 'normal eldritch thing' isn't really at play here

Eldritch Defense — Warrior-Class Sheet
In-Universe, the warrior-class are the kaiju specifically trained, bred, and built for combat. What that means for you is that they will be the “Heroes”, so to speak. (The Player Characters)
- Name: (can be an actual name, a designation, or title. You can include what the humans call them, if they have had clashes with humans in the past.)
- Nickname: (What the other kaiju refer to yours as.)
- Appearance: (What do they look like? Are they a thing like an octopus with hooves? Are they similar to a laser-breathing, three-legged, betentacled ostrich? You decide! Keep in mind that the average height is 50 feet. You can go higher or lower, but don't be too extreme. Shout Outs are encouraged
- Features/Powers/Abilities: (What can they do? Sonic screams, atomic lasers, electromagnetic powers? Be careful to not be overpowered. You can add in downsides if you want to, if you feel the power set for your beast is a bit OP. Otherwise, go nuts!)
- Backstory: (Where do they hail from within the [alienname] empire? Have they had combat experience outside of their training? Be as vague or detailed as you like.)
- Personality: (How do they treat other kaiju? How do they act in combat?
- Other Notes: (Things that don't really fit into the other categories.)

....Weird idea for a kaiju, and bear with me here, Zombie Kaiju.
Basically, a giant, mobile mass of dead organic matter, that can heal itself by ingesting MORE dead organic matter.
Also, idea for the plot: The PC's are evil eldritch abominations seeking to invade reality and turn it into our own personal fiefdom. Twist is, we're doing it to SEVERAL realities, and the entire campaign is an attempt to accumulate property. Meanwhile, a multi-versal league of the remnants of taken over universes have banded together, creating dozens of mech models to slow or at least halt our progress.
Its so easy when your evil
