Also, I wonder if a Grimm can turn other people into Grimm by, I don't know, infecting them or whatever.

They'd have run out by now. But they're also explicitly not normal animals, so they probably don't reproduce in the usual way. I like the idea that the material they dissolve into upon death reforms into new Grimm somewhere else, but that doesn't really have any basis in anything.
Would it though? Would a Grimm the size of a continent even notice humans attacking it?

Grimms can be killed by dozens by barely trained teenagers and enough firepower.
Grimms are not like normal animals and most likely don't reproduce.
People have fighting off for centuries or longer.
