The reason he doesn't really want Souma to cook is probably at least linked to the reason Azami wants revenge for whatever happened to him.
Its amazing how much we don't actually know behind the motivations of all of these characters. You think its tied to Soma's mother?

Come to think of it, Erina doesn't even realize her idol and her father's ideologies are at odds, does she? She just kind of assumes that Jouichirou must be a super perfectionist because how else could he be so good?
It's probably one of those things she's aware of without realizing it. Like, I doubt she would have told Soma all this if she thought her father and Jouichiro were insych about things like this.

Makes sense when you recall Jouichiro made her realize that cooking could be something enjoyable for her; "Wow, his cooking is amazing, clearly he must be some type of perfect cooking god"
A lazy millennial who's good at what he does.^^ My guess is that she thinks the difference between them is more one of personality and methodology rather than a fundamentally different approach. Azami is a jerk, but maybe solitary geniuses need to enforce their will onto the masses. There's no point in innovation when in her experience people trying to change recipes results in things like the gorilla hot springs imagine spot at the beginning because a cook skipped one of the preparation stages.
Souma doesn't really buy into that perspective though and he was raised by someone she respects. There isn't really anyone else she can turn to about this personal dilemma of hers. I don't think a lot of the other students would even fully understand her perspective because their thinking basically stops at 'Azami is a jerk, so we need to oppose him.' After all, a lot of the student body do seem to buy into Azami's position and always have.
Edit: Actually, rereading the first few chapters, I'm going to say Jouichirou probably doesn't really factor into this directly at all. He made something good in a way she'd never seen done before and had never even considered. He made fun of her at the same time so she got all jerky about it, but she did approve of his first dish back then in a way. His comments at the time are very on point for her internal issues. This series really does plan things out well, doesn't it?

This happened before she got brainwashed by her father I believe so her forgetting something that doesn't pertain to Azami's ideals makes sense to me. She was conditioned to only approve of the most perfect cuisine so I could see how she'd remember the one person who challenged that but not remember why. She was practically forced to forget that.

Seems Souma managed to thaw Erina's frozen heart. What great chapter. This is the turning point in both their relationship (all aboard the ship!) and the fight against Azami, who now lost he influence he had on Erina.
Can't wait for the next chapter.

So yea, really heartwarming chapter and culmination of everything they've went through till now...god, its so weird. I always felt like they'd drag out the reveal of who Jouichiro was to Soma, or have Erina bury the hatchet with the latter.
But nope, we've wrapped all of that up pretty nicely and it was just as cathartic as it should have been. I really am curious on where we're going from here.

For a long time now, the series has been very big on the idea that for a chef to achieve their true potential they must find their own personal style of cooking. One that shows their face.
But Erina didn't actually want to cook is the rigid, restrictive style that Azami made her use. That's not really her, just something her father forced on her.
And yet despite that, she's considered the greatest genius to ever attend Tootsuki and joined the Elite 10 while in middle school.
And now that she remembered what kind of cooking she really wanted to make and can create a style that is truly her, the question is:
How many types of screwed the Central is?
We don't know because we have no idea what she's going to do lol. I doubt its going to be as simple as "Erina kicks everyone's ass", but its definitely the start of a major thorn in Central's side.

He wasn't going to stop him from doing it if that's what he really wanted but we've actually heard him say "I didn't want him to become a cook" and made no attempt to teach him anything besides what he would need to work in their diner.
He figured he'd give up after a few loses but eventually realized he'd never be discouraged.
