Every game system has very different rules for setting things up. Due to that, the process for getting soundtracks ripped for games on each system is very different.
Just because people who are used to the ripping process are able to do it easily, you should most certainly not make the assumption that it would be easy for everyone. If it was, the people who designed the system to have everything set up in a way that was easy to rip were not doing their job properly in preventing people from simply copying the entire games.
The fact of the matter is that you're not supposed to disassemble the game, and ripping the soundtrack falls right under that. It's in every TOS ever. Just because they have you legally held by the balls if you do decide to does not mean that they have to make it easy.
Is it possible for you to just get the OST?

NOT A SINGLE ONE seen an official soundtrack release. Meanwhile, Phinal Phantasy and Metal Gear Solid enjoy official albums with every new installment.

At least for PS 1, it depend on the individual game. Many* uses the Redbook audio format, which is very easy to rip or listen to outside of the game (put the disc in any CD player and skip the first track).

Alt account of Angeldog 2437.ALL Spyro PS 1 games use the standard .XA format for non-sample based full audio tracks. Now, there is a program I know that runs on Windows 7 that plays and converts those. It has been recently updated, so there will not be any compatibility issues.
I have recently tried my hand on extracting Spyro the Dragon (1-3) for personal enjoyment. It was HARD AS HELL. It took me half a year maybe to find a program that works and a week to MAKE it work.
In an age where you can find ripped soundtracks to pretty much EVERY game out there, why is it so difficult for MOI? Is there something that I'm missing?
