Let's see...
- 100% completion in Donkey Kong 64. Although more challenging for the sheer volume of stuff to get, it still contains such ridiculous gems as the minigame Beaver Bother, the coin-collecting beetle races, and, of course, beating the original DK arcade game without dying. Fun times.
- Rayman Origins, including the Land of the Livid Dead. Pretty difficult game overall, yes, but the Livid Dead in particular is one of those levels that makes you wonder why a loving god permits this to exist.
- Vexx. It's not just the challenging platforming; it's also the fact that the final boss is totally brutal. There is that one oddball Wraithheart I never got, but I put that one totally on the game developers for making it rather unfair to get one of the required collectables.
- Monster Rancher DS. It's definitely one of the more challenging Monster Rancher games in the series; not quite as hard as 2, but far less forgiving than all the PS 2 games and slightly less so than the GBA games (which are about mid-level difficulty). 2 is still most brutal in my opinion, though, and I never did truly beat that one.
Let's see:
Zelda 2, Adventure of Link was very challenging from start to finish.
Eye of the Beholder for the SNES: It isn't hard in the sense that enemies deal a lot of damage, it's hard because the game is not very self explanatory. I tried many play throughs just trying to figure out the mechanics. Once I figured it out, it was a fairly hard game.
Lo Z A Link to the Past minimalist run. If I could show my death counter at the end of the credits, I managed to stay in single digit deaths for most of the dungeons, but once I got to Turtle rock and Ganon's tower, my death counter went through the roof. 64 and ~55 for them both.

- Devil May Cry 1 & 3
- Rayman Origins (platinum'd!)
- All the Bit.Trip games except Core and Fate (though I admit to having to switch to Easy to for Beat and Void, because holy crap)
I did this with an original DS. Minus getting the bombs early, going through Ganon's Tower, fighting Ganon, and getting the Silver Arrows. Man, glitching from Mountain Tower to Palace of Darkness was a pain, both in being finnicky and making my fingers hurt.
I did cheat and get the Tempered Sword, Red Shield, Ice Rod, Shovel, Magic Powder, Flute, Bug Catching Net, and four bottles with fairies though

Mega Man Zero 1-4 - Didn't rank too high on any of them, but I got through.
Super Meat Boy - Just the main game, but that was pretty challenging for me.
VVVVVV - Got all the collectibles, even >_>
Persona 3 - And I still say "screw you, final boss"
Super Mario 3D Land - I completed everything save the absolute final level. Can I count this? >_>

Games that can be beaten by me are automatically disqualified as 'difficult'.
That said, people seem to be impressed when they hear I beat the story mode of F Zero GX on very hard. Twice.

- VVVVVV (including all collectibles)
- Super Mario 3 D Land (that means all levels, cleared with every Star Medal, at the top of the Flagpole, with both brothers, and the Brutal Bonus Level)

FinalFantasyXIII I found pretty challenging, but in a good way.
SuperMarioBros.Wii Little Cousin Run. Its where you play with your little cousin, sister, etc. who think its funny to pick you up and throw you into pits.

Devil Survivor is hard? I got the best ending on my first go. Of course, I always get forced into doing the hardest ending first, because I'm always roleplaying the lawful good hero.
I tell you, that tendency really screwed me over when I played Valkyrie Profile Covenant Of The Plume. Still managed to beat it, though.

Diablo III Inferno Difficulty.

I guess we could go... wherever we please.I guess if we're considering VVVVVV and the more recent Mario games (NSMB Wii, Galaxy 2, 3D Land) as "difficult", I can add those to my list.
Somehow you know that the time is right.To name a few...
- I Wanna Be The Guy: Actually beat The Guy. Took me like 4000 deaths though...
- Touhou: Every game cleared on Easy at minimum. Most cleared on Normal or better. All Extra Stages but Subterranean Animism, Undefined Fantastic Object and Ten Desires cleared. (Great Fairy Wars was my most recent.)
- Cat Planet: For a 10 minute game, that shit is HARD! (Especially if you try to reverse the game after you reach the end.)
- Super Metroid: Got a 92% item rate as well.
- Cave Story: Includes a roughly 5 minute long Hell run.
- Bunny Must Die: both modes and both under an hour.
- ALL Warcraft RTS games. All of them.
- All the Generals or earlier Command And Conquer games. (The first two are by far the hardest.)
- Modern Warfare, Modern Warfare 2, World At War, all on Veteran difficulty. (I've cleared Modern Warfare 3, but not yet on Veteran)
- The entire Halo series on Legendary. Even Reach.
It only took you 4000 deaths? Dang I suck.
Either Kingdom Hearts or Sonic Unleashed.

VVVVVV is really the only "difficult" game I've beaten that I didn't beat on a low difficulty level (because there are no difficulty levels), so I guess that.
Well, other than that, I've beaten all of the main series Guitar Hero and Rock Band games since 2008* on Expert.
