Why do I have such a hard time floating in water without the help of floats even with a full breath held? (only tested in swimming pools, so I don't know if I have an easier time in the ocean)

I know this question had been asked but type of hand-to-hand combat techniques was taught to soldiers in Middle Ages and even before then practice besides fencing and swordmanship?
