The 'unlimited detail' would refer to the fact that surface textures can remain 3D-looking no matter how much you zoom in.
Notch did mention other Voxel engines, though.
Actually, Cube 2: Sauerbraten also works off of Octrees, but I don't think that's a Voxel engine.
