It is beyond delicious, but I wonder if I can replace half of the honey with applesauce? The online converter I've used insisted that 1/2 cup honey = 6 tablespoons, and I was a bit weirded out. Now, I have a HUGE sweet tooth, but I think I could replace half of it without it becoming not sweet enough for me. However, I wonder if the cupcake is going to hold together in this case. Could anyone experienced in baking (I am not - it is my 3-rd cupcake ever, starting this week) give any suggestions?

Applesauce or even molasses.

Applesauce makes it pretty fluffy so I would stick with that.

[up][up] Which online converter are you using? At least in the States, 1/2 cup = 8 tablespoonsnote , and I'm pretty sure those conversions are equal between the US and Britain.

I've used a Kitchen Pro iphone app.

And yes, as I see now, it's 8. Not sure why I've read it as 6, but in the end I've added 5 and still considered it a bit too much

Simple meal this lunch... which I'm getting happy reminders of (not sure about other people, though).

Rollmops with bread to mop everything up, sliced crudities (carrots and celery) with pickled gherkins and red cabbage. In short: a winter salad with fish. Followed by coffee and a ginger biscuit. Simple for me, but yummy.

Need to get rollmops more often: I totally forget how much I love 'em.

I'm back on an oats kick. It's a filling and healthy little snack, especially since I can add almonds and raisins to it. Sometimes even shredded unsweetened coconut. Applesauce is good too.

Jelly, honey, and syrup are good in small doses. But I'm thinking shredded carrot or zucchini would be a good addition.

Ham, cloves, cumin and caraway: add something a bit sweet into that and you're away.

@Euo - Hm, never tried thickening.

Chicken salad with chicken breast, lettuce, and cabbage, with caesar dressing - great.

Not as much if said lettuce is a week old and the cabbage a month.

I got some pumpkin to mix with my oatmeal. I'm wondering what else I can mix with it, maybe on a sandwich somehow.

I also was surprised to find cucumbers cheaper than zucchini at the store so it was cucumbers I grabbed and will make up in my daily veggie medley at work.

After 4 years of experimentation I am admitting defeat on the pumpkin pie with an actual pumpkin. I made one with pumpkin from a ca last night and it was the best yet. SO DELICIOUS. And it only took me 15 minutes plus bake time, as opposed to the 1.5 hour prep fiasco that is roasting a whole sugar pie pumpkin then scooping it.

So almost all of the other meal types I've bought I used at least twice, and I figured I ought to make rice for dinner tonight. Maybe when I've got money for ingredients I'll experiment with rice recipes, but this was straightforward basic rice. Half a cup of rice is a bit small as a full meal, but I have tons of Halloween candy left.

Last night was Potatoes Stroganoff out of a box, which I'd never seen before. Just a hamburger skillet meal with dried potato slices instead of noodles.

Ori: Steaming or boiling the pumpkin is much less of a time sink than roasting. Without cutting, it barely took 20 minutes to get some puree, and the skin was so soft I just tossed the soft chunks into the blender instead of scooping.

Para: You had plain rice? That's unthinkable. I would have at least sauteed some vegetables or something to go with it.

When I was a student and money was tight, a staple was overcooked rice, doused with soy sauce. Maybe some chilli flakes if I had any spices left and was feeling adventurous.

Pumpkin in oatmeal isn't bad.

2 T Pumpkin with 20 raisins, 15 almonds, and just 2 tsp of sugar free maple syrup on 1/4 cup of cooked oats. Only 225 calories and a lot of protein. I could probably do with just 1 tsp of syrup next time.

Rice with soy sauce. It's cheap and simple. At home it was a side with sausage or chop suey, but when I'm in bachelor mode, especially in famine bachelor mode, I eat it alone.

Also powdered mashed potatoes. Normally a side, but I eat them as a meal sometimes.

[up]For me, poverty meals are: rice and veggies (with, if I'm lucky... soy or Quorn mince) with that soy sauce. Frozen, dried or fresh, it makes no odds what form the veg or soy takes.
