As for Star Wars. Meh. The only real change I can see an issue with is the Han-shooting-first thing, because, well, it changes the character dynamics a bit. Other than that...so?
Then again, the first Star Wars movie I ever saw was Phantom Menace. I loved it. My sister loved Jarjar.

Well, keep in mind, we were elementary school age. If it came out in 1999, I was 5 and my sister was 4. But I assume it's more accurate to think I was 6-7 with her being 5-6

I'm just old enough to have had the VHS' as a kid first, before getting the CGI-enhanced versions as an early teen, and I kind of remember being disappointed by some things that I don't remember but mostly being impressed by others.
In particular, the later versions introduce Jabba as a character early, so you don't have just a one-off conversation to establish him as a threat. I haven't seen a version without that scene since I was eight or nine, but I get the impression that without it he would've been more of a forgotten element that was suddenly supposed to be considered important all along. That particular but of added setting foundation alone makes me question how the newer versions could have specifically made the story suffer as apposed to other complaints.
Speaking of giant monsters, the Sarlacc. Holy crap was the original design of the Sarlacc cruddy. Usually, the lack of budget the original series was faced with resulted in endearing designs, especially the "worn out space" look of the series and the understated, definitely not over-the-top feel of the battles (though several of the lightsaber fights go the opposite direction and look like the actors themselves are bored). But the Sarlacc? Oh, man. That thing needed touching up.
On the other hand, it brought us that performance scene in Jabba's Palace. Take it or leave it - I'm good at automatically telling things that people will dislike even though I don't, so I know there's probably large amounts of people who don't like it. I, myself, find it mildly entertaining. But there's no denying it's unnecessary.
On the other, other hand, it brought us that addition to the final scene where we pan across a celebrating galaxy. Granted, it's really only relevant as a finale to the entire series (prequels included), and if you only watched the original series you might not find it as necessary, but it's still satisfying.
As for the prequels - I used to heavily dislike The Phantom Menace until someone pointed out to me that if you ignore Jar Jar and certain other racially insensitive elements, it's actually a very well put together plot. Which is true, and I'm the kind of person who can try to enjoy the whole even if certain individual elements are poor. So now I'm only kind of indifferent to it, on the grounds that Jar Jar is actually kind of difficult to ignore. At least, I am entertained watching it but often don't want to.
I despise Attack Of the Clones, mostly due to Anakin's terrible characterization, but think Revenge Of The Sith did a fairly decent job in making up for it.
