* He also probably uses some boxing (his standard bouncing-on-his-toes stance is very boxer-life and he has a devastating uppercut, not to mention his final boxing match with the Black Baron), wrestling (he busts out enough pro-wrestling moves to satisfy the WrestlerInAllOfUs, and he's clearly a skilled grappler as shown by his throws), maybe some Muay Thai (mostly shown in his spinning back-fist), whatever hand-to-hand styles the US Marine Corps currently uses (on account of his backstory) and whatever martial art teaches you chainsaw-fu, but Wing Chug is probably his core-discipline.

Wing Chung's default attacks rely on chaining together lightning fast straight-punches to overwhelm and incapacitate an opponent quickly- which sounds a lot like Jack's basic punch-punch-punch combo. Wing Chung also does place much emphasis on blocking, but on counter-attacking an opponent as they attack you. This resembles not only how Jack never blocks attacks during normal gameplay, but also how his power struggles frequently take the form of counter attacks against an opponents own attacks. Wing Chung also doesn't have to much of an emphasis on kicks, which again resembles how Jack doesn't kick much when fighting in gameplay. Wing Chung has two weapon forms- a set of large twin knives and a six-foot staff wielded not-unlike a spear. Jack wields both paired knifes and a long spear (used not-unlike a staff) as weapon pick-ups.
