There are still a ton of unresolved issues between the two; Alador promising to work on his behavior isn't going to just erase the harm his actions have caused, nor can Amity just take his word for it.
** Luz may have made peace with her father's death long ago, but that doesn't mean all of the emotions it can stir up are gone. The pain of loss and the mourning for someone you love may never truly go away. Being unable to perform a tradition that helps with coming to terms with that loss certainly wasn't going to help.
