Luke's conviction that he is the Last Jedi is rationalized as either a deliberate ploy by Luke to ensure the First Order doesn't hound the hidden Jedi on their mission, or a byproduct of the hidden Jedi faking their deaths and Luke genuinely not knowing they survived or even purely political rhetoric on part of the overly confident bad guys and a figure of speech by the good guys...oddly this approach to contradicting certain pieces of dialogue is done within canon proper as well so The One Canon is merely following precedent.
