Some unscrupulous bartenders want to use a customer's intoxicated state to coax more money out of them, but don't want them to get any more drunk, so they will water down the drinks or replace alcoholic components of cocktails with non-alcoholic substitutes (which is very easy with fruity cocktails or "bitch drinks", as the fruit flavors traditionally overpower the alcohol anyways), with the drunk none the wiser due to the body's inability to detect alcohol past a certain intoxication threshold. [[note]]These are also called B-drinks, and may be served to bar entertainers ("B-girls") who chat up customers and encourage them to buy them drinks. The B-girl gets the B-drink so she doesn't get too loaded.[[/note]]
