Erina's father, Senzaemon's son-in-law and former First Seat of the Council of Ten. He was banished from the family and from Tootsuki for basically brainwashing his daughter against her will to adopt his mindset, but makes a reappearance at the end of the Full Moon Banquet, where he usurps Senzaemon's position as Dean. He is the one who taught Erina everything she knows about cooking and where her extremist attitude comes from.

* EvilIsHammy: The guy sounds like a {{Chuunibyo}} who forgot he is an adult. He views the cooking world as HighFantasy and himself as its DarkLord. It is surprising he got so much support.

* DarkMessiah: His proposal to make everyone exclusively follow the Council of Ten's cooking methods while making it easier to graduate actually tempts a lot of students to support him. And if the new judges are any indication, he managed to build a group of devotees during his time away from the Nakiri family.

* BreakTheHaughty: Is subjected to this by Erina in the final bout of the Regiment de Cuisine. Azami is completely cornered and Soma's ShutUpHannibal hammers the final nail. He is stripped to his panties in front of the whole school and is booted off as the Headmaster, effectively disbanding Central.

* ControlFreak: Oh, '''big time'''. He treats Erina more like an UnwittingPawn then a living person. Keeping her from interacting with anyone, having her sample foods day in and day out, and basically controlling her social life to the tiniest detail. It's no wonder Erina's the way she is with that kind of parentage. And then his plan for the new Tootsuki takes this up to eleven where he essentially plans to [[spoiler:control the entire student body in much the same manner in order to mass-produce cooks that cook food according to his vision of what real gourmet food is!]] To make things worse, Eishi reveals that Azami plans on shutting down all of Japan's restaurants that don't live up to his standards. Chapter 194 reveals that [[spoiler:this even applies to his idol, Jouichirou, to the point where Azami wants to shut down his senpai's diner and make him TheDragon]].

* FantasyForbiddingFather: To a truly disturbing degree too. He's basically trying to control Erina's entire social life as he cuts her off from both family and friends so she can focus more of her time on refining her God's Tongue, and cultivates an environment where he can keep an eye on her at all times.

* CoolTeacher: Played with. He is very harsh towards his apprentices, although he does believe in their potential. He wished Soma to become the 1st Seat of the Elite Ten (which became true). Megumi also became the member of the Elite Ten

* {{Irony}}: He had originally expelled Megumi and criticised her for being so clumsy. He later ends up training her for the Regiment de Cuisine and she becomes a member of the prestigious Elite Ten.

* {{Abusive Parent|s}}: He claims that he only educated Erina, but Senzaemon is sickened by his actions, calling it brainwashing. Azami would lock up Erina in a dark room and foce her to sample food. She is then forced to throw away the inferior dishes, and Azami would physically hurt her if she refused.

* JerkassHasAPoint: He mentions that he doesn't understand how people think anything with first-class ingredients is automatically "gourmet food" -- something Soma has disproved time and time again.
** Erina admits to herself that despite being traumatized by his training, her god's tongue had made it so that she was already highly disillusioned with the number of "ill-made dishes". Therefore, she agrees to some extent with his ideals.

* {{Abusive Parent|s}}: He claims that he only educated Erina, but Senzaemon is sickened by his actions, calling it brainwashing. She would be locked in a dark room and forced to sample food. The inferior dish would be thrown away and Erina would be physically abused until she did so. On top of this, she was mentally abused into parroting all of Azami's elitist and cruel opinions. As a result, Azami was banished, disinherited from the Nakiri line (though he seemingly refused to accept this) and Erina still has not really recovered in the present.

* AmbiguouslyBi: On one hand, Hinako enjoys flirting with her female underclassmen. She said Megumi is her "type", tells Taki how cute she is when she smiles, and loves to hold their hands. On the other hand, she also likes teasing Kojirou, bordering on a ShipTease.

* {{Foil}}: To her protégé Akira -- both know their spices, but Jun merely puts it into theory, while Akira takes a hands-on approach. Unlike the mature, reliable, street smart, cool and down-to-earth Akira, Jun is naive, ditzy, easily angered and dependent.

* CoolTeacher: He is capable of seeing how other people can be better chefs. Also, when asked why he still works for Tootsuki rather than opening his own restaurant, Gin always puts the students and his ''alma mater'' as his first priority.

* TheChessmaster: He literally says he is this to Soma and the Polar Star residents, since he views Eizan's defeat as only one pawn in his massive chessboard.

* StarterVillain: She's the first hurdle Soma's group has to get over in the Hokkado trials. The rest of the Polar Star and Autumn Contestants that resist Azami's rule likewise have to deal with similar crooked examiners.

* EveryoneWentToSchoolTogether: They all know each other from their student days at Tootsuki. Jouichirou, Gin, Jun and [[spoiler:Azami]] used to live together in Polar Star during the former two's third-year tenures; Kojirou, Hinako, Fuyumi and Donato are lifelong friends, with Hitoshi as their senpai; and Taiki and Sonoka seem to know each other as well.

Both are vegetable specialists from rural backgrounds, but where Megumi is a meek, nervous NiceGirl who specializes in Japanese comfort foods and [[TechnicianVersusPerformer is almost pure Performer]], Shinomiya is a brash, arrogant ''haute cuisine'' specialist who leans very heavily towards Technician. Then, there's the times they have clashed.

General Head Chef of Tootsuki Resort and a member of the board of directors, Gin supervises the freshmen training camp. A former roommate in the Polar Star Dormitory with 69th Generation batch-mate Jouichirou and their middle-school underclassman Jun, he was also the First Seat of the Council of Ten in his time.

* AuthorityEqualsAsskicking: He was the First Seat of the Council of Ten back in his day, with Jouichirou as his Second Seat during their time. He also became the protector of the Polar Star Dorms back then.
* BashBrothers: According to Fumio, he and Jouichirou were in charge of defending the Polar Star Dorms from its many enemies, by barricading the entrance or winning the Shokugekis.

** When he inhaled to give a big speech, he almost choked and proceeded like nothing happened.

* GymBunny: It's very clear that his muscles are product of regular workout. When he finally meets Soma in person, he chooses to have his very important talk with him ''at the park, while working out''.

* YamatoNadeshiko: Subverted. She may look gentle, but she's actually quite a tease -- she purposely dawdled when asked to judge between Soma and Takumi's dishes before hastily announcing a draw when her group was ordered to return to the HQ, and she seems to enjoy making fun of Shinomiya. While she appears gentle outside, she shares the same competitive ideology as her colleagues and will not hesitate to expel subpar chef students. She's also pretty excitable and enjoys flirting with high school girls.

* YamatoNadeshiko: Subverted. His main goal is to reform Tootsuki by destroying the Status Quo, while also insulting all of her customers.[[spoiler: After chapter 133 he becomes the new dean, booting his former father-in-law from the position, and now has the power to do as he pleases with the academy. She later decides to lead the rebellion and take back Tootsuki from him, even if it means resigning from the Council of Ten]].
