Fraudulent Victorian mediums would produce "ectoplasm" from which ghosts would be able to manifest. The ectoplasm looked a lot like white silk, probably because this was exactly what it was. The person pretending to be the ghost would crouch down under all the silk and then stand up, "manifesting" by taking it off, hence ghosts looking like white sheets.
