So, to explain my edit, I could be forgetting a detail/missed it when reading, but IIRC, it wasn't that the old religion solely sacrificed gay people. I got the impression that they sacrificed a lot of people, and it's a bit ambiguous the extent to which sacrificing homosexuals was some kind of Loophole Abuse take on Virgin Sacrifice versus homophobic violence.
I think it plays with the trope that they (at least in part) interpreted the virgin part to mean "someone who didn't have sex with the opposite sex"- although even that's kind of hazy in practice since for example I got the impression Teo probably "experimented" before coming out. And at the same time, Temmoc's motivation for sacrificing her was out of a legitimate belief that she would be a good sacrifice, as opposed to an excuse to kill gay people (although I think the audience is supposed to conclude that it was often an excuse to kill gay people).
Incidentally, I do wonder at the motivation behind killing the King in Red's boyfriend. The above played into it, but I also wonder if like Kopil, the lover was a Craftsman, and that was another motivation.

Tl; dr, I think it is a case of Playing with a Trope and Not A Subversion.
