Per my recollection, Wake isn't defined by his love for lobster. I don't remember him talking about how much he loves eating lobster or enjoys cooking it at any point before or after his fight with Winslow over his cooking. When Winslow insults his cooking, Wake at first balks at the criticism and then insists that Winslow must at least like his lobster. So instead of being characterized as a lobster fanatic, Wake is just sensitive about criticisms of his cooking because he thinks he's a great cook and that he cooks lobster particularly well.
Also, the part about "only lobster" is wrong because they have potatoes and other food on their plates when they're eating, so Wake isn't just making lobster.
