(Even putting time paradoxes aside, killing your past self just doesn't seem to be a smart thing to do.)

The universe is under no obligation to make sense to us.I think that a perfectly valid stable time loop would be for them to realise what's going on and then point their past selves to the exit, exactly as they saw their future selves do a few minutes earlier (and then they carry on afterwards with no more time shenanigans). On the bright side, that ensures that we already know no one suffers any major injury at the moment (except for maybe Complains' leg I suppose). On the downside, that means the demon-axe problem is set in stone...

Attacking someone from behind is also not necessarily evil. It's good tactics. An axe to the face will kill someone just as dead as to the spine. Before battle starts, please do announce yourselves and give them a chance to surrender if you want to be the Good Guy, but once initiative has been rolled, there's nothing left other than to fight to win, especially if the opponent is such an overwhelming force.
Considering the kind of shit Saral Caine must've gotten up to, this would probably be one of the many, many points the players would openly revolt against the DM.

Ears is struggling with the classic Paladin dilemma wherein you're essentially subject to the whim of the unknowably malevolent gods with respect to what might be considered Good vs. Evil acts.

The opponent being evil is irrelevant. You are good or evil based entirely on your own internal feelings regarding doing harm or giving support. It's 100% Virtue-based ethics, rules and outcomes don't matter.
That said, we dont know if Ears assessment of himself is accurate. He could be too harsh on himself. But if so, what broke the axe?

You fell victim to one of the classic blunders!First, Ears was reluctant to attack Kore from behind. Complains persuaded him. Second, they were already in combat with him, and it was pretty clear by then that Kore cannot be negotiated with. There was absolutely nothing evil about anything Ears did in that battle.

Minmax and Complains speak of "Inverted knees", however these don't look like knees to me, but like good ol' animal legs (the "knees" actually being the ankle). Especially as the actual knees can be seen.
